Zucchini Hummus
Zucchini Hummus
1 (15 oz.) can chickpeas, drained and rinsed
1 c coarsely chopped zucchini
1 garlic clove, chopped
1/4 c chopped fresh parsley
1/4 c chopped fresh basil
1/2 tsp salt
ground black pepper (to taste)
1/4 cup extra virgin olive oil
1 tsp fresh lemon juice
Combine all ingredients in a food processor and pulse until desired consistency is reached. Serves 4.
